DOLCETTO

It is a very diffused vine in Southern Piedmont, where alone or combined with other vines, is part of daily life.

Someone could think that the name “Dolcetto” derives from its sweetish aroma, but it actually refers to the type of grapes used for its production which have a taste as sweet as pleasant.

This type of vine, commonly named “nibiò” started to be raised two centuries ago and has found its perfect habitat in clayey-calcareous lands between 250 and 600 metres.

Dolcetto wine can be tasted precociously, but if the alcoholic content is high, the aroma is full-bodied and it is made with the maceration on the longest peels, a longer aging can improve its organoleptic features therefore becoming a high quality wine.

Specific features

  • Colour: ruby red, with purple reflections more or less evident, but always intense;
  • Aroma: distinctive, with a pleasant winy taste, sometimes fruity;
  • Flavour: dry, quite full-bodied, harmonic, with a pleasant bitterish aftertaste;
  • Minimum alcoholic content minima:10,5°;
  • Minimum total acidity: 4,5 g/l;
  • Minimum dry extract: 20 g/l.

Production grapes

Dolcetto grapes: minimum 85%. Other red-berry grapes, non aromatic, suitable to cultivation in Piedmont can also be used.

  • Flavour: full-bodied, a little tannic;

  • Minimum total acidity: 4,5 g/l;
  • Minimum dry extract: 18 g/l.

Food matches and serving suggestions

Dolcetto Novello can be adopted as a daily table wine. This is due to the low alcoholic content and the harmonic taste, which makes this wine excellent for usual dishes. It is specially recommended with soups, pasta with light sauces, white meat, cold cuts and quite ripe cheese. If more aged Dolcetto is recommended with savoury dishes, braised meats and very ripe cheese.
